Responsibilities:
• Come up with new dishes.
• Establish the working schedule and organize the work in the kitchen so that everything works like a "well-oiled machinery".
• Produce high quality dishes that follow the established menu and meet the location standards, as well as the clients' requirements.
• Plan the food design in order to create a perfect match between the dish's appearance and its taste
• Discover talented chefs and train them in order to reach the high standards of the location.
• Train the auxiliary kitchen staff in order to provide the best results in minimum time and use the available resources to the maximum.
• Maintain order and discipline in the kitchen during the working hours.
• Ensure that the professional equipment is in good condition and signal any malfunction before it affects the staff or the clients.
• Ensure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish that leaves the kitchen door.
• Supervise and control the roster with the help of the senior chef de parties and chef de parties.
• Control quality and weight of the ingredients we receive in collaboration with the purchasing teams.
• Sign direct purchase invoices.
• Attend the weekly F&B committee meetings.
• Attend HOD meetings.
• Check that the purchasing teams follow up on the market list.
• Control the food costing.
• Complete the daily paperwork (PH, ANL).
• Check that the ordering made by the evening shift is processed by the purchasing team in a timely manner.
• Create, follow, and work on the roster with the Chef de parties & Senior Chef de parties.
Requirements:
• Ability to speak, read, analyze, and interpret standard of performance manuals, technics, procedure, manuals or statutory regulations.
• Working knowledge of various computer software programs Microsoft Office.
